Cooking Foods. Deep Frying

Deep frying is a method of preparing food whereby the food is completely covered with hot oil or fat. This method is also known as deep fat frying.

How to Deep Fry Food

Deep frying is done using a deep fat fryer or a heavy deep pan. A slotted spoon is required for removing the food from the hot oil if a basket is not available.

Discussing how to deep fry food

Grade Five pupils at Koma Primary School were discussing deep fried food.

Dache:

My mother cooks for us deep fried fish fillet every Sunday. After cleaning the fish, she adds some salt and lemon juice before putting it in hot oil. In fact, it doesn’t take long to cook. It tastes very good.

Chumo:

My elder sister, also makes deep fried chicken. She cuts it up into pieces, sprinkles some salt and spices and then puts the chicken in hot oil.After it cooks, she removes it with a slotted spoon that allows the oil to drip back into the deep frying pan. She then puts the cooked chicken in a bowl lined with absorbent paper to absorb the oil.

Patel:

My aunt told me that other foods like green bananas, potatoes and cassava can also be deep fried. She said that deep frying is a very quick way of cooking delicious food.

Safety precautions when deep frying food

Activity 11

Discussing the safety precautions when deep frying food

Read the following safety precautions

  1. Lower the food gently into the hot oil.
  2. Never leave the pan with the hot oil unattended.
  3. All foods to be deep fried should be dried completely.
  4. Never boil water next to a pan with hot oil.
  5. Never touch the food with bare hands immediately it comes out of hot oil.

Cooking Using the Deep Frying Method

Potatoes are eaten in most Kenyan households. There are different methods of cooking potatoes. Deep fat frying is a popular method of cooking potatoes in Kenya.

Your teacher will show you how to deep fry potatoes. Watch your teacher keenly.

Practise how to deep fry potatoes.

You will require

  • 8 medium sized potatoes, salt, cooking oil, deep frying pan, slotted spoon, a bowl, a plate and absorbent paper

Method

  1. Wash the potatoes to remove soil and dirt then peel them.
  2. Wash the potatoes again and cut them in quarters.
  3. Add cooking oil in a deep frying pan and place it on fire. Ensure the pan is not more than two thirds full for safety.
  4. Heat the oil until it is hot enough. You can tell the oil is hot enough when it browns a cube of bread in 30 seconds.
  5. Using a slotted spoon, lower the potatoes gently into the hot oil to avoid splashing.
  6. Fry the potatoes, gently turning them until they are golden brown in colour.
  7. Remove from the oil using a slotted spoon and put them in a bowl lined with absorbent paper.
  8. Leave the oil to cool completely. Put the oil in a bottle for later use.

Sometimes, it is not possible to get all the equipment needed to deep fry food. It is, therefore, important to know how to use the locally available equipment, which can also serve the same purpose.

After cooking, food should be served in an hygienic and attractive way. This ensures we enjoy our meals.

You will require

  • A serving dish, 2 plates, a serving spoon, 2 tablespoons and a table cloth.

Method

  1. Cover the table with a clean table cloth.
  2. Use clean utensils.
  3. Do not serve too much food on the plate.
  4. You may use other foods to ensure a balanced meal and to improve the appearance of the food.
